Cream Cheese Frosting:
4 ounces cream cheese, softened
1/4 cup butter, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/3 cup chopped pecans
Directions:
Preparation: Preheat your oven to 350°F (175°C) and grease a loaf pan with nonstick spray.
Mixing the Batter: In a large bowl, blend bananas, sugars, egg, and oil. Mix in flour, baking powder, baking soda, and salt just until combined. Fold in coconut, pineapple, and pecans.
Baking: Transfer the batter to the loaf pan and bake for 55-60 minutes, or until a toothpick comes out clean. Cool on a wire rack.
Preparing the Frosting: Beat cream cheese and butter until smooth. Gradually mix in powdered sugar, vanilla, and cinnamon until creamy. Spread over the cooled bread and sprinkle with pecans.
